Bee Bread / Perga 100 grams
These pass some of the collected material directly to the offspring and to the hive bees as food. However, there is still enough of the pollen left over that has to be stored. The crux: fresh pollen spoils very quickly, so it must be preserved in some form. To do this, bees mix the fresh pollen with saliva, enzymes and glandular secretions, which leads to fermentation through biological-chemical processes.
Finally, the industrious animals coat the fermented pollen with a very thin layer of propolis, so that bacteria, fungi and parasites have no chance of getting at the high-quality perga/bee bread. Once all this work is done, the bee bread is brought into the honeycomb cell and tamped down firmly.
The harvest by hand
The beekeeper can extract these solid hexagons - although in sustainable beekeeping, of course, only little perga or bee bread is extracted, often only what is still stored in the comb cells after the season. The small hexagonal plates are best removed from the comb cells when it is cold, which is why many beekeepers freeze the comb cells to extract perga. Punching out the hexagonal bee bread plates is a laborious and time-consuming task, which is why there are not many beekeepers who take on this challenge.
One of the most valuable bee products
Perga is one of the most valuable bee products of all. This is true in several areas: on the one hand, harvesting is a time-consuming process, on the other hand, bee bread has a multitude of valuable properties - also on the human organism. By the way, it tastes delicately mild and offers a delicate contrast between sweet and sour. It goes excellently with honey bread or simply as a snack.
